Protein Brownies

RECIPE--


Batter:

-100g zucchini

-45 mL unsweetened vanilla almond or cashew milk

-1 whole large egg

-31g PEScience Select Vanilla Protein

-15g black cocoa powder

-10g coconut flour

-3g stevia

-2g baking powder


Frosting:

-10g PEScience Select Protein Powder

-10g black cocoa powder

-2g coconut flour

-2g stevia


Directions:

Preheat oven to 350 degrees Fahrenheit.


Grease small baking pan.


Add zucchini, almond milk, and egg to a food processor. Blend for 60 to 90 seconds until mixture is completely smooth with no chunks.


In a small bowl, combine all the dry ingredients and mix thoroughly.


Add dry ingredients to the zucchini mixture and mix until well incorporated.


Pour batter into your baking dish and bake 8-12 minutes until the center is not jiggly anymore. It is better to undercook than overcook,


While the brownies are baking, make the frosting by combining all the dry ingredients thoroughly in a small bowl. Add 10mL of water to start and then slowly add water until you get your preferred frosting consistency.


When the brownies are done, let them cool on a rack for at least 10 minutes and then frost them.
